Chicken Livers Cacciatore

Saute together in a Dutch oven in 1/4 cup olive oil:

2 lbs chicken livers, blanched

3 large onions, quartered and sliced thin

2 cloves garlic, minced

Add and simmer 1 1/2 hrs. until flavors are melded.

one can chopped tomatoes

1/4 cup green olives

1/4 cup black olives

1 tbs capers

a pinch each:

sage, oregano, thyme

Serve with pasta or potatoes.

 

 

Chicken or Rabbit Cacciatore

1 chicken or rabbit, jointed and browned

3-4 large onions halved and sliced thin

2 cloves garlic minced

Saute onions with garlic until they are clear. Line a large oven proof Dutch oven with onions. Place chicken on top of it. Add:

4 tomatoes quartered

2 tbs capers

1/2 cup olives (black and green)

1 bay leaf

4 sage leaves

1 tsp oregano

Bake for an hour at 350. Serve with roasted potatoes.

 

Meatballs 1

Mix together and form into balls

1 lb ground meat

1 small onion, minced

1 clove garlic, minced

2 small slices of bread, soaked in water

1 egg

1 pinch oregano / basil

salt and pepper to taste

Fry in a little olive oil until bropwned and done through.

 

 

Meatballs 2

Mix together and form into oblongs (4 in. by 2 in)

1 lb ground beef or beef and lamb

1 small onion diced

2 slices bread, soaked in water or broth

1 egg

1 tsp cumin

1 tbs chopped parsley

Grill until browned and done through over charcoals.

 

Persian Meatballs with Rice

Make meatballs and brown in a little butter or oil

1 lb ground meat

1 onion minced

1 slice bread

1 egg

pinch dried mint leaves

1/4 tsp cinnamon

salt and pepper to taste

Cook 1 1/2 cups rice in 3 cups water in a large saucepan halfway

put meatballs on top of rice

Top with 6 carrots sliced paper thin, a tbs butter, and a pinch of mint leaves. Cook until rice is done and carrots are tender.

 

Chicken Constantinople

1 chicken, jointed and browned in a large skillet or Dutch oven

Add and cook five minutes

1 onion finely chopped

1 green or red pepper sliced thin

Coat vegetables and chicken with 1 tbs flour

Add

1/2 cup raisins

1 cup broth

Cook for an hour. Add salt and pepper to taste and

1/4 cup toasted pine nuts.

Serve on rice:

1 1/2 cups rice cooked in

1 1/2 cups water

1 1/2 cups tomato juice

Put rice on a large platter with chicken in the center.

 

Sausage Sandwiches

Cook 1 package pork links

Saute 2 large onions halved and thinnly sliced

with a pinch of basil and caraway

Serve on toasted English muffins or crumpets or in pita bread

 

Chicken Thighs with Olives

Fry in olive oil until skin is brown

4-6 chicken thighs salted and peppered

Add

Simmer for one hour until the meat is tender. Add 12 large green or black olives and cook for ten minutes. Serve on a bed of cooked orzo or broken spaghetti.

 

Shrimp omelet

1 lb cooked shrimp

heat a tbs of olive oil add 1 clove garlic finely sliced when it is lightly toasted add shrimp. 2 tbs minced parsley 1 tsp cumin 1/2 tsp salt 4 beaten eggs

when egg is set fold

serve sprinkled with sugar

Shrimp omelet with almonds

1 lb boiled shrimp

Heat olive oil

Add 1 onion minced when onion is golden add 4 tbs minced parsley

1/2 tsp cumin

shrimps

1/2 c toasted almonds, chopped

1 tsp sugar

4 eggs beaten

when it is set sprinkle with toasted almonds and sugar

serve hot in wedges

 

Turkish Green Beans with ground meat

Saute 2 chopped onions in butter. Add 1/2 lb ground beef and cook until juices are absorbed and it is lightly browned. Add 1 lb chopped tomatoes, salt and pepper. Stir in 2 lbs fresh green beans trimmed and cut into 2-3 pieces. Cover and cook until the beans soften and begin to lose their color. Stir fry for 2-3 min. Add 1 c. hot water, fresh ground pepper. Cook until beans are tender (30-40 min?) (add more water if needed). Serve with pasta or rice.
